This recipe is brought to you by La Maison d’Asie in Geneva during the Swiss Taste Week 2022. It is their signature dish: Homemade curry.
Ingredients

For 2 people:
- 200g beef slices
- 20g red curry
- 200ml coconut milk
- 30g sugar
- 1 tablespoon fish sauce (“Nuoc-mâm; nước mắm”)
- ¼ red bell pepper, julienned
- 1 onion, julienned
- Some slices of canned bamboo shoots
- Some straw mushrooms
- Some finely chopped Thai basil leaves
- 1 stalk lemongrass, cut into pieces
- Some kaffir lime leaves
Instructions
- In a saucepan, cook the pieces of lemongrass and kaffir lime leaves in 100ml of water for 10 minutes to extract juice.
- Lightly sprinkle the beef slices with baking powder and sauté in oil.
- In a saucepan, pour the lemongrass and kaffir lime leaf juice and mix with the curry, coconut milk, sugar, and fish sauce. Then add the beef slices and vegetables and let simmer.
- For decoration, add some Thai basil leaves and some slices of red chili before serving.
