Beef Slices in Red Curry

This recipe is brought to you by La Maison d’Asie in Geneva during the Swiss Taste Week 2022. It is their signature dish: Homemade curry.


Ingredients

For 2 people:

  • 200g beef slices
  • 20g red curry
  • 200ml coconut milk
  • 30g sugar
  • 1 tablespoon fish sauce (“Nuoc-mâm; nước mắm”)
  • ¼ red bell pepper, julienned
  • 1 onion, julienned
  • Some slices of canned bamboo shoots
  • Some straw mushrooms
  • Some finely chopped Thai basil leaves
  • 1 stalk lemongrass, cut into pieces
  • Some kaffir lime leaves

Instructions

  1. In a saucepan, cook the pieces of lemongrass and kaffir lime leaves in 100ml of water for 10 minutes to extract juice.
  2. Lightly sprinkle the beef slices with baking powder and sauté in oil.
  3. In a saucepan, pour the lemongrass and kaffir lime leaf juice and mix with the curry, coconut milk, sugar, and fish sauce. Then add the beef slices and vegetables and let simmer.
  4. For decoration, add some Thai basil leaves and some slices of red chili before serving.
