Malakoff Cromesquis Style: It is a ball of Gruyère AOP coated with a little nutmeg and chervil.
Ingredients

For about ten pieces:
- 1 kg of Gruyère AOP (500 g salted and 500 g unsalted)
- 100 g of cream
- 100 g of chopped herbs (chervil)
- Pepper
For the breading:
- 1 egg
- Flour
- Ground toasted breadcrumbs
Instructions
- Put the Gruyère AOP in a bowl and mix with cream, chopped herbs, and pepper.
- Shape the mixture into small balls and place them in the freezer.
- Roll the frozen balls in the breading twice.
- Fry in a deep fryer for 1 minute, then let rest for 30 seconds.
- Fry again for 2 minutes.
