Description
The chefs from Label Fait Maison certified restaurants offer their recipes with Gruyère AOP.
This recipe is provided by the collective catering of Gymnasium Beaulieu in Lausanne.
Ingredients

- 200 g flour
- 175 g Gruyère AOP
- 100 g pumpkin in small cubes
- 4 eggs
- 75 g melted butter
- ½ packet baking powder
- 1 dl milk
- 3 tablespoons honey
- Salt, pepper
Instructions
- Preheat the oven to 170°C.
- Mix the flour, eggs, milk, butter, and baking powder.
- Season with salt and pepper, then add the cheese, pumpkin, and 2 tablespoons of honey.
- Mix everything well and pour into the molds.
- Bake for about 40 minutes and, upon removal from the oven, brush the small cakes with the remaining honey.
Notes
You can serve the cakes as a dessert with vanilla custard and red fruits or as a main course with a minted pea cream soup or braised fennel.
