Description

The chefs from Label Fait Maison certified restaurants offer their recipes with Gruyère AOP.

This recipe is provided by the collective catering of Gymnasium Beaulieu in Lausanne.


Ingredients

Scale
  • 200 g flour
  • 175 g Gruyère AOP
  • 100 g pumpkin in small cubes
  • 4 eggs
  • 75 g melted butter
  • ½ packet baking powder
  • 1 dl milk
  • 3 tablespoons honey
  • Salt, pepper

Instructions

  1. Preheat the oven to 170°C.
  2. Mix the flour, eggs, milk, butter, and baking powder.
  3. Season with salt and pepper, then add the cheese, pumpkin, and 2 tablespoons of honey.
  4. Mix everything well and pour into the molds.
  5. Bake for about 40 minutes and, upon removal from the oven, brush the small cakes with the remaining honey.

Notes

You can serve the cakes as a dessert with vanilla custard and red fruits or as a main course with a minted pea cream soup or braised fennel.
